It has the richness and sweetness unique to super fruit tomatoes, a refreshing taste with less acidity, and a moderate refreshing feeling, so you won't get tired of it even if you eat it every day. The umami of each ingredient is concentrated, so you can enjoy a wide variety of flavors that bring out the flavor of the ingredients and pair perfectly with any dish. From children to adults, the whole family can enjoy this delicious dish.

This is a product created through the development cooperation of the Japan Vegetable Sommelier Association for the first time. The seasoning sommelier and vegetable sommelier ``MICHIKO'' produced and developed the product.
Using carefully selected raw materials
Ingredients include the super sweet and delicious tomato with a sugar content of 9° or more that won the Vegetable Sommelier Summit 2023 Gold Award, flower yuzu with plenty of fruit juice, onions and celery as aromatic vegetables, and red vinegar (rice vinegar), which is indispensable for Edomae sushi. ), a luxurious ``dressing sauce'' using white soy sauce with an amber color and aroma, and genuine sesame oil white mouth with an unroasted flavor and richness.
Review vegetables and seasonings from scratch, visit producers, multiply ingredients, add and subtract. Sometimes we change the ingredients and repeat the taste, resulting in a masterpiece. This one ``dre sauce'' can be used for anything.

① Super fruit tomato
We use the ``Super Fruit Tomato'' that won the Vegetable Sommelier Summit.
Tomatoes are one of the most produced vegetables in the world, and the rich umami substance glutamic acid in tomatoes is the basic flavor of ``Dore Tare.'' Using a cultivation method developed over a long period of time, this tomato is a large, richly flavored and sweet tomato (with a sugar content of 9±0.5 degrees) that overturns the conventional wisdom of small-sized fruit tomatoes. The flesh is dense, there is little jelly, and the texture is very satisfying. All tomatoes are tested for sugar content and shape using the industry's best sorting machine before being shipped.
②Flower yuzu
Uses Hana Yuzu, which has a refreshing acidity that balances the flavor.
Special product of Izu Inatori. A yuzu native to Japan, it is a close relative of the yuzu and weighs only about 50g each, but it is full of juice. I use it in place of yuzu, kabozu, and sudachi. It has a milder aroma than yuzu. Mixed with tomatoes and other ingredients, it creates a complex aroma and adds a refreshing citrus flavor.
③ Grated onion/celery powder
Add the flavor and richness of aromatic vegetables! We mainly use products from Chiba Prefecture.
The base is onions and celery, which are popular as flavored vegetables. Vegetables are rich in glutamic acid, the umami component, which enhances the overall deliciousness of the ``Dore Tare''. Onions blend well with other ingredients, double the flavor, and improve digestion and absorption. The aromatic components of celery increase appetite and have relaxing effects.
④ Seasoning “Kinsho Rice Vinegar”
An important acidity that brings out umami and richness.
Yokoi Jozo Co., Ltd. is a long-established vinegar company, and most of the sushi restaurants featured in the Michelin Guide use their vinegar. I use "Kinsho" for business use. A blend of rich red vinegar made from long-aged sake lees and mild rice vinegar made from domestic rice. This rice vinegar has both the rich umami taste of red vinegar and the rich aroma of rice vinegar.
Adding red vinegar gives ``Dore Tare'' a sense of transparency and gives it a beautiful color. Vinegar is a sour seasoning that contains organic acids. Adding vinegar not only makes it delicious, but it is also essential for increasing the flavor and richness. It can also be expected to have a bactericidal effect.
⑤ Seasoning “White soy sauce”
The main character behind “Dore Tare” is white soy sauce!
Used as a base, the aroma and flavor of white soy sauce gently envelops the taste of other ingredients, making it a beautiful highlight! ! Founded in 1830, this soy sauce is based on the techniques cultivated over its 190-year history, and has been producing white soy sauce for the first time in the Kanto region for 63 years. White soy sauce is a very light soy sauce with a beautiful amber color. The gentle aroma, slight sweetness, and color of the ingredients can be brought out as is. By using it in ``Dore Tare'', it not only adds a deep flavor and umami salty taste, but also maintains the elegant taste and color beautifully. The flavor and aroma of soy sauce in the aftertaste is indescribable.
⑥ Seasoning “Iwai’s genuine sesame oil white mouth”
Magical magic that can only be done with sesame oil white mouth!
A long-established store in Yokohama that has been dedicated to sesame oil for 160 years uses traditional techniques and spares no effort to carefully squeeze out sesame oil white mouth.
Sesame oil is an amber-colored sesame oil that is made by roasting sesame seeds to give it a rich aroma and flavor, but this white oil is made by steaming the sesame seeds and pressing the oil instead of roasting them. It has less aroma than roasted oil, is colorless, and has no taste. It is characterized by a refreshing aftertaste and the deep richness and flavor unique to sesame seeds. Recently, the usage of ``on oil'' has been increasing, and it is the perfect oil to add to cooking. 3% of the total amount is added to “Dore Tare”. This small amount of oil is the secret to making the food more palatable and delicious to eat.
